Spruce-Ginger Soba Noodles

Spruce tips are packed with Vitamin C and are incredibly tasty, they have a bold and beautiful citrus flavour – we refer to them as our local lemons! Spruce tips contain carotenoids and are rich in minerals, such as potassium and magnesium.

Like most of our vinegars, spruce tip vinegar is great for the base of a salad dressing – combine the vinegar with oil, a sweetener, like local honey or maple syrup, some tangy ginger and wait for the crowd to ask you ‘what made that salad so tasty!’

Spruce-Ginger Soba Noodles

Serves 6

  • 8 oz Soba noodles
  • 2 heads of Broccoli
  • 4 sprigs of Green onion
  • Nettle Gomasio
Dressing
  • 1/3 cup tahini
  • 2 tablespoons Spruce Tip Vinegar
  • 1 tablespoons white miso (optional)
  • 1 tablespoon fresh ginger, minced
  • 2 teaspoons tamari or soy sauce
  • 1 teaspoon toasted sesame oil
  • Handful fresh cilantro, chopped finely
  • Dash of red pepper flakes

Mix together in bowl, add as much desired water as you wish. Toss noodles with broccoli & green onions, sprinkle with our Nettle Gomasio at the end!
