White Pine (Pinus strobus) is a native tree in Eastern Ontario. Compared to all the other species of pine that grow in Canada it has soft and delicately aromatic needles that make a wonderful spice. We make our White Pine & Rosemary Salt by blending wild harvested White Pine needles, organic rosemary and a blend of sea salt and pink Himalayan salt. The flavours and character of the pine pairs perfectly with rosemary. In our household, this spice mix goes on anything and everything we roast in the oven. You can try it on otehr types of meat as well and all different types of root veggies.
Roasted Chicken & Veggies
- 2 servings chicken legs and/or potatoes
- 1 tsp White Pine & Rosemary Salt
- 1 tbsp olive oil
For Chicken: baste chicken with oil and sprinkle with white pine & rosemary salt.
Bake at 400F for 35-40 minutes
For Potatoes: cut potatoes into bite-size pieces. Toss in oil and spice.
Bake at 450F for 20 minutes or until done & stirring occasionally.
