Wild Leek Vinegar

Wild Leek Infused-vinegar is wonderful used in salad dressings, marinades, stir-fry's or simply drizzled on steamed veggies. It can be substituted easily with other recipes that use apple cider vinegar. See some of our tasty recipes below.

These Ontario wild leeks (also called Wild Ramps) are harvested sustainably (leaf only) and infused in organic, raw, unpasteurized apple cider vinegar.

Wild Leek (Allium tricoccum) leaves are harvested in the early spring and have a strong pungent flavour and smell which is best described as a mix of onion and garlic. This vinegar is best enjoyed fresh as a finishing sauce or served with bread and oil to fully experience their wild flavour and aroma. Wild Leeks or 'Ramps; are a very popular wild food that has over-harvested in many parts of its range. We use only the leek leaves which allows us to sustainably harvest the flavour of ramps without killing the plants.

Ingredients: Organic apple cider vinegar, natural wild leek leaf extract.

Shake before use, sedimentation is natural. Once opened this vinegar will last a year in your pantry. For fresher flavour keep in your fridge.

Tangy Garden Cucumber Salad

  • 1/4 cup wild leek vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon wild salt
  • Black pepper
  • 2 pounds cucumbers (about 4 medium)
  • 2 tablespoons finely chopped parsley

Place the Wild Leek vinegar, oil, salt, and a few grinds of pepper in a large bowl and whisk to combine.

Slice the cucumbers into thin 1/8-inch-thick rounds. Place them in the bowl, add the parsley, and toss to combine. Cover and refrigerate for at least 30 minutes or overnight to allow the flavors to meld.

3 tbsp - extra virgin olive oil
2 tbsp - Wild Leek Vinegar
pinch of salt and pepper - use our Wild Salt for an extra delicious touch!
